INGREDIENTS:
3 large tomatoes, diced
1 large onion, diced
2 tablespoons diced jalapenos
1/2 cup fresh cilantro (diced)
2 teaspoons salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 tablespoon olive oil
1 tablespoon white vinegar
DIRECTIONS:
Mix all ingredients together in large container until well blended. Allow to set for at least 6 hours, it is better if allowed to sit overnight.

I used to work at applebees as a prep cook and make 5lbs or more or this a day. The only thing is that it is red onions that are used.
