American Grill Smoked Lemon Honey-Marinated Mahi Mahi
- add review
- #9601
ingredients
4 pieces (8 ounce size) mahi mahi
2 cups olive oil
1/2 cup honey
1/4 cup fresh lemon juice
1 teaspoon liquid smoke
directions
Combine all ingredients, except mahi mahi, in large bowl, stir with wire whip until well-mixed. Place fish in a shallow pan and pour marinade mixture over the top. Let stand for 2 to 3 hours in the refrigerator.
Mahi mahi can be grilled or sauteed. Grilling is preferable, as it brings out more flavor. If grilling, remove fish from marinade and place on grill, cook until desired temperature is reached. If sauteing, remove from marinade and place in saute pan with a touch of oil. Cook until fish is golden brown.
Place apple potato salad in center of plate, about 1 to 2 inches wide and tall. Place mahi mahi on top and garnish with rosemary or parsley.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
The name, vodka, comes from the Russian phrase zhiznennaia voda, or "water of life". It can be made from everything from potatoes to beets. It's considered to be fairly flavorless which makes it a great liquor for mixed drinks.

Could have used some spices, too lemony not enough honey. Agreed though, its hard to mess up fresh Mahi.

I am suspicious that someone just made this up. There is no reason to use 2 cups of olive oil, and it does not call for salt or pepper. Still, it was OK because if you start with fresh dolphin, it is difficult to mess it up unless you overcook it. I used 1/2 cup of teh olive oil, more lemon juice and salt and pepper. Mahi is a fish that takes pepper well, regardless of the recipe.

Wow! This was an amazingly good meal; even my fish-finicky niece loved it. The suggested apple-potato salad is a perfect complement to the mahi mahi...
