Copycat Albertson's Crab Salad

This crab salad made with imitation crab, green onions, and mayo is a close facsimile to the one you find at Albertson's grocery store.

ingredients

2 pounds imitation crab meat, chopped or flaked
1/2 cup mayonnaise
2/3 cup sliced green onion tops and bottoms
salt and pepper, to taste

directions

Combine the crab, mayonnaise, and green onions in a bowl. Cover and place in the refrigerator for a minimum of 2 hours.

Stir well and season to taste with salt and pepper before serving. Add additional mayonnaise if needed.

cook's notes

You can also add chopped celery if desired.

    This leaves much to be desired, beginning with the use of "imitation" crab. Anything which is imitation (in this case Pollak) has an 'off' flavor & texture, and is usually heavily processed. Also, a good Crab Salad contains diced celery, diced or grated onion OR shallot, salt & pepper, Old Bay Seasoning (optional), and a good quality mayonaise, such as "Duke's". BTW, use only enough mayo to hold everything together. Don't drown it in mayo, let the crab & the ingredients shine.

    • This is a copycat recipe from Albertson's. Their crab salad has almost a cult following as it's a very popular item there. Their salad uses imitation crab. We have many other crab salad recipes (using real crab) on the site so I'm sure you can find one that fits your requirements. No need to stick to this one.

    It's a great recipe but it's even better when you add diced red onion along with the green onions, dill pickles chopped up fine, celery and old bay seasoning to taste!

    Some crab salads can be a little bland, but the spring onions add some zip to the taste. I added a little lettuce and celery and made wraps with it. Great!

    I thought this was pretty close to the crab salad I've tried from Albertson's in the past. It's been several years since I had it (all their locations closed here), but I remember it being a simple salad, yet quite tasty.

    The albertson's crab salad here in CA has celery, yellow or white onion, sometimes* cheese, and black olives.

    The Albertsons' crab salad I've bought contained imitation crab, shredded american cheese, chopped black olives, diced celery, onion and red peppers. Of course this could be regional, but I don't believe Albetsons would do that.
