ingredients

1 cup crushed saltine crackers
1 cup cornmeal
2 tablespoons paprika
5 teaspoons seafood seasoning
2 teaspoons salt
1 1/2 teaspoon black pepper

directions

Combine and seal in a large resealable plastic bag. Store in a cool dry place for up to 6 months.

To Prepare Fish: For 1 pound fillets, place 1/3 cup coating in a shallow bowl coat both sides of the fillets.

Place in a greased 13-inch x 9-inch x 2-inch baking dish. Bake, uncovered, at 400 degrees F for 12-15 minutes or until fish flakes with a fork. Yield: 4 servings.
