ingredients

1 cup Cream of Wheat, not instant
2 teaspoons kosher salt
1 teaspoon cayenne pepper
1 teaspoon white pepper, fresh ground

directions

In a small bowl, mix the Cream of Wheat with the salt, cayenne and white pepper.

The coating can be stored at room temperature in an airtight container for up to 1 week.

Use this coating for shrimp or white-flesh fish fillets such as flounder, or oily fish, such as salmon. Pan-fry or deep-fry them in vegetable oil.
