A good breading can make a world of a difference. The seasoned breadcrumbs can be made ahead of time for some quick breaded chicken or pork chops whenever you need.

2 cups dry bread crumbs
1/4 cup all-purpose flour
3 tablespoons paprika
4 teaspoons salt
2 teaspoons sugar
2 teaspoons onion powder
2 teaspoons ground oregano
1 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/4 cup solid shortening
Combine the bread crumbs, flour, paprika, salt, sugar, onion powder, oregano, cayenne, and garlic powder in a bowl. Mix well. 
 Add the shortening and cut into the dry mixture using a pastry blender or two forks. Mix until the breading is crumbly. Transfer to an airtight container and keep for up to 2 months. 
 To use the breading mix: Dip pieces of chicken or pork into milk, letting any excess drip off. Dredge in the breading mix. Place in a shallow baking dish and bake at 400 degrees F for 50-60 minutes or until the chicken or pork is cooked through and the breading is golden brown.

I use this on my chicken about once a week. I've tried varying things a little but mostly come back to the exact recipe. One thing I like to do is use crushed croutons instead of bread crumbs.

Nice, Simple and taste good. What a man needs if he is trying to do a little chicken for his family, especially his son. Setting an independent example. You can do it!
