ingredients
1/2 cup water
1/2 cup skim milk, room temperature
3 egg whites, whipped
1 1/2 cup grated zucchini
1 teaspoon vanilla extract
1/2 cup applesauce
2 cups bran, unprocessed
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 dash ginger
1 dash cloves
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup granulated sugar
directions
Preheat oven at 350 degrees F. Prepare muffin pan with cooking spray and flour.
In a mixing bowl, combine water, milk, egg whites, zucchini, vanilla and applesauce.
In another mixing bowl, combine bran, cinnamon, nutmeg, ginger, cloves, baking powder, baking soda and sugar. Mix wet ingredients with dry ingredients just until moistened.
Pour into prepared pans. Bake for 30 minutes.

These "muffins" have a nice taste, but dreadful texture. There is no flour in the recipe, and the finished product is more "spoon bread" or bread pudding than muffin. They are very dense and moist to the point of soggy. I will probably try them again, but experiment adding flour in 1/4 c increments.
