Stir-Fried Cabbage With Eggs (Orak-Arik)

ingredients
1/2 teaspoon white pepper
1 teaspoon salt
1 pound cabbage (finely shredded)
1 teaspoon ginger (finely chopped fresh)
2 cloves garlic (finely chopped)
3 eggs (lightly beaten)
4 tablespoons vegetable oil
4 shallots (finely sliced)
5 tablespoons water (hot)
directions
Heat the oil in a wok. Add the shallots, garlic, and ginger and stir-fry for 2-3 minutes.
Add the shredded cabbage and salt and stir-fry for 3 minutes. Add the hot water and ground white pepper, stir again, then cover the wok and simmer for 2-4 minutes.
Uncover the wok, increase the heat, and stir the cabbage continuously for 1 minute. Add the beaten eggs and stir and turn them vigorously until they are scrambled and cooked through. Season to taste and serve immediately.

Really, really excellent! I added some diced onions and black mustard seeds. But either way this was a stellar recipe.

This was surprisingly good and amazingly cheap dish that I enjoyed for days. I made it with purple cabbage, and it turned out a weird color, and my family wouldn't touch it, but oh well. Great with rice or alone.

Thank you for this recipe. As a child in the 1950's I was introduced to this by Yugoslavian immigrant neighbors. The whole family loved this meal as we grew cabbage in the vege garden and it gave the cabbage a new lease on life. I wasn't able to replicate this recipe as my mum couldn't remember it completely. Cooking this recipe was like stepping back in time. The aroma and then the flavour of that childhood favourite was awesome!

Really good. I ate some before adding the egg and liked that too. In the future, I want to try beef or chicken instead of eggs.
