Ingredients:
1 medium sized head cabbage
1 cup shredded Monterey Jack cheese
2 tablespoons butter
2 tablespoons flour
1 1/4 cup milk
1/4 teaspoon salt
1/8 teaspoon paprika
2 tablespoons minced onion
1 tablespoon minced parsley
1/3 cup bread crumbs

Directions:

Shred or chop the cabbage fine. Cook in a small amount of lightly salted boiling water until tender but still crisp, 7-8 minutes. Drain well. Place cabbage and cheese in layers in a greased 10 x 6 x 1 3/4 inch baking dish (1 1/2 quart).

Melt butter; blend in flour; stir milk in slowly. Cook and stir until sauce comes to a boil and starts to thicken. Add salt, paprika, onion, and parsley. Pour sauce over cabbage. Sprinkle with bread crumbs.

Bake in a preheated oven at 400 degrees for 15 to 20 minutes or until crumbs are brown and mixture starts to bubble.
