Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

My store only had baby bok choy so I used about 8 of those instead of two of the larger. It was easy and good but could use something else. I think maybe i'd add in some waterchestnuts next time for some crunch.

Loved how easy and tasty this recipe was. If you can't get fresh bok choy you can substitute green cabbage. We used toasted sesame seeds for extra flavor.
