ingredients
6 slices bacon, diced
1 tablespoon margarine
1 cup onion, chopped
1/2 cup green bell pepper, chopped
3/4 teaspoon cayenne pepper, or to taste
2 cups canned tomatoes, diced
1 1/2 pound cabbage, chopped
directions
Cook bacon in a large heavy saucepan until brown and crisp. Add margarine and onion. Cook over medium heat until onions are translucent.
Add green pepper and cook until soft, about 5 minutes more. Add cayenne; stir well.
Add cabbage and tomatoes; mix well. (Mixture will seem dry.) Cook slowly over medium heat, about 30 minutes or until cabbage is tender. Do not overcook.

Being from N.O. I had never heard of Cajun Cabbage and wanted to try this out. Made it for my family last night and it was a big hit. I decreased the amount of cayenne to 1/2 teaspoon...3/4 would have been too hot. This is definitely a winner in my book and will definitely make it again.

I love this recipe, have made it twice now. It's a great way to use excess cabbage! I did make a few changes. I added 1/2 - 3/4 lb lamb italian sausage before adding the onions and added a few fresh hot peppers chopped up.
