3 packages (10 ounce size) frozen spinach, thawed and drained well
2 cups low-fat (1%) cottage cheese
1 1/2 cup shredded fat-free Cheddar cheese
3 eggs, well beaten
1/4 cup flour
4 tablespoons light, soft tub margarine, melted
directions
Grease the inside of the crock pot.
In a bowl, combine all the ingredients and mix well. Pour into the greased crock pot.
Cover the crock pot and cook on high heat for 1 hour. Reduce the heat to low heat and cook for 3-4 more hours or until the mixture is set and souffle-like.
