This iconic whiskey is a "Jack of all trades" when it comes to cooking. Toss it in some pasta, as a savory dipping sauce, and even bake it into something sweet.

Fresh spinach, potatoes, and onion curried in a rich spice mixture. Vegetarian Indian cooking at its best.

1 potato, peeled and diced
vegetable oil or vegetable ghee
1 onion, sliced
1 clove garlic, minced
1 teaspoon grated fresh ginger
2 cardamom pods
1/2 teaspoon fennel seeds
1/4 teaspoon ground cumin
1/4 teaspoon ground turmeric
1/2 teaspoon ground coriander
1/4 teaspoon chili powder
9 ounces fresh spinach
1/4 teaspoon salt
1 dash fresh lemon juice
1 tomato, cut in wedges, optional
Bring a pan of water to a boil over medium-high heat. Add the potato cubes and boil until they are almost cooked but still are a bit firm. Drain well.
Meanwhile, heat a thin layer of oil or ghee in a deep skillet over medium heat. Add the onion, garlic, ginger, cardamom, fennel seeds, cumin, turmeric, coriander, and chili powder. Cook, stirring frequently, until the onion is soft.
Add the potato cubes and spinach and reduce the heat to low. Stir in the salt, lemon juice, and tomato. Cook covered, stirring occasionally, for about 15 minutes or until the spinach is wilted and the potatoes are tender.
Serve hot.

My Indian neighbor introduced me to a lot of delicious dishes. She moved recently and I was missing her cooking so I tried this recipe. It is very similar to the sag aloo that she makes. Very good recipe (although I still miss her cooking!)

This was very tasty and very very easy to make. I precooked my chopped potatoes in the microwave for 7 minutes, fried spices and onions, before adding potatoes and loads of spinach. My hubby loved it. Will submit a picture next time!
