Italian Spinach

ingredients
2 packages (10 ounce size) frozen spinach
garlic, chopped
olive oil
egg
shredded Parmesan, Romano, or mozzarella cheese (whatever you have)
directions
Thaw spinach, or microwave in package to defrost. Drain almost all liquid from the spinach (squeeze it).
Saute the garlic and spinach in skillet with the olive oil, until the spinach is tender. Stir in the egg, and the cheese. The amount of garlic will depend on individual taste.

I had no idea what to cook for a side dish for dinner. The only frozen veggies I had was frozen spinach. This recipe worked great. I made it as directed but then put it in a baking dish and topped it with the cheese then and baked it until bubbly. A very simple concept but we really enjoyed it.
