Espinaca A La Catalana (Sauteed Spinach With Pine Nuts And Golden Raisins)

4 tablespoons olive oil
4 cloves garlic, peeled and sliced
2 pounds fresh spinach, stemmed, rinsed, and dried
coarse sea salt, to taste
1/4 cup pine nuts
1/3 cup golden raisins
In a large skillet, heat the oil over medium heat for 5 seconds. Add the garlic and cook, stirring, for 30 seconds.
Add the spinach and sea salt. Using tongs, keep turning the spinach over to coat it with oil. After 1 minute, add the nuts and raisins. Stir until the spinach wilts.
Transfer to a platter to serve.
