Creamy Curried Spinach

ingredients
3 packages (10 ounce size) frozen spinach, thawed
1 large onion, chopped
4 cloves garlic, minced
2 tablespoons curry powder
2 tablespoons butter or margarine, melted
1/2 cup chicken stock
1/4 cup heavy cream
1 teaspoon lemon juice
directions
Combine the spinach, onion, garlic, curry powder, butter and chicken stock in the crock pot slow cooker. Cover and cook on low 3-4 hours or on HIGH for 2 hours.
Thirty minutes before the end of the cooking time, add the heavy cream and lemon juice. Mix to combine. Replace the cover.

I sauteed the onion before putting it in the crock pot to give it better texture. The curry flavor is quite pungent so if you don't want it as strong use less and maybe a mild brand. It wasn't too overwhelming to eat, just very curry but overall good. I will make this again.
