Roasted Cauliflower With Soy Ginger Or Curry Yogurt Sauce

ingredients
1 head cauliflower, cut into 8 wedges
1/4 cup olive oil
kosher salt and pepper
SOY GINGER SAUCE WITH SCALLIONS
2 teaspoons oil
2 cloves garlic, minced
1 teaspoon fresh ginger, minced
2 tablespoons soy sauce
2 tablespoons mirin
1 tablespoon rice vinegar
1/4 cup water
1 teaspoon sesame oil
1 scallion, sliced
CURRY YOGURT SAUCE WITH CILANTRO
1 teaspoon oil
1 shallot, minced
2 teaspoons curry
1/4 teaspoon red pepper
1/3 cup water
1/4 cup yogurt
1 teaspoon lime juice
2 tablespoons cilantro, minced
salt and pepper
directions
Heat oven to 475 degrees F, with rack in lowest position. Place cauliflower wedges on foil lined pan and drizzle with oil and seasonings on both sides. Cover tightly with foil and bake for 10 minutes.
Remove foil and bake for 10 minutes on one side and then flip and cook another 10 minutes. Season with salt and pepper and additional oil and serve with desired sauce.
SOY GINGER SAUCE WITH SCALLIONS: Cook garlic and ginger in oil for about 1 minute. Add soy, mirin, vinegar and water and simmer until syrupy. Drizzle over cauliflower and garnish with scallions.
CURRY YOGURT SAUCE WITH CILANTRO: Cook shallot in oil for about 2 minutes. Stir in curry and pepper flakes and cook for about 1 minute. Remove from heat and whisk in water, yogurt, lime, cilantro and salt and pepper. Drizzle over cauliflower.
