ingredients

2 tablespoons butter
1/2 pound ground turkey
1 onion, chopped
1 green bell pepper, chopped
2 cups chicken stock
1 can (8 ounce size) tomato sauce
1 cup long-grain white rice, uncooked
2 tablespoons Worcestershire sauce
1/2 teaspoon chili powder
1/2 teaspoon thyme
1/4 teaspoon Tabasco sauce
1/8 teaspoon cayenne pepper, optional
black pepper, to taste

directions

In a skillet melt butter over medium heat. Add ground turkey, onion and green pepper and cook until turkey is browned and vegetables are tender.

Add remaining ingredients, bring to a boil, reduce heat, cover and simmer until rice is tender, about 30 minutes.

    I normally dont save the recipes I try, but this recipe for spanish rice was a keeper. It's hearty enough for a main meal. I've made it 3 times now. Very good.
