ingredients

1 cup long grain rice
3 tablespoons oil
1 onion, diced small
1 clove garlic, minced
1 1/2 teaspoon salt
1/4 teaspoon chili powder
4 ounces canned tomato sauce
2 1/4 cups water or canned chicken broth
1 1/2 cup shredded monterey jack cheese

directions

In a large skillet, brown rice in oil. Add the remaining ingredients, let simmer, covered, over low heat for 25 minutes or until tender.

I like to add one can chopped green chiles after the rice has browned, along with other ingredients. When done, transfer to an 8"x8" casserole dish. Top with shredded Monterey Jack Cheese. Micro-wave at high, right before serving, to melt cheese.

    me and my sister are fourteen and hav been trying to make spanish rice for a really long time but it always comes out wrong we live with our dad and although our mom's showed us how we couldnt until we did tried this recipe!!!

    I LOVED this recipe! I added bell peppers instead of the chilles (I didn't have chilles) and I added corn to make it a vegetarian main dish. I could never get my little one to eat rice, but she loved it!

    This is the easiest and tastiest rice to make! We even used brown rice and it was fantastic! We also added the chopped tomatoes with green chiles-gives it a bit of a kick. The cheese on top is just wonderful and top it with a little low fat sour cream and you have a melt-in-your-mouth side dish.

    This is very good and super easy. I substituted a can or Rotel with Green Chilies for the tomato sauce and reduced the amount of salt to 1/2t. as I used reduced sodium canned chicken broth...garlic powder...about 1/2 works well instead of chopped garlic. Great!

    This is a nice, fast, easy recipe for a classic Spanish rice. Very tasty and adding the green chile made it more reminiscent of New Mexico than the Midwest (which I consider to be a good thing!).
