It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

3 cups water
1 bay leaf
3/4 teaspoon dried oregano
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 tablespoon olive oil
1 3/4 cup couscous
2 jars (6.4 ounce) marinated artichoke hearts, quartered and drained
1/3 cup chopped walnuts
1 tablespoon lemon juice
2 tablespoons chopped parsley
In a 3 1/2-quart saucepan, combine the water, bay leaf, oregano, salt, pepper, and olive oil. Bring to a boil and stir in couscous. Bring back to a boil. Cover and remove from the heat. Set aside 5 minutes.
Uncover and stir in artichoke hearts, walnuts, lemon juice, and parsley. Recover and set aside 5 minutes before serving.
