Veal Cordon Bleu

ingredients
2 veal cutlets
2 slices Swiss cheese
2 slices boiled ham
salt and pepper
1/2 cup flour
3/4 cup milk
1/2 cup bread crumbs
1/4 cup Parmesan cheese
1 1/4 sticks sweet butter
1/2 cup cooked peas
several sprigs fresh parsley
directions
Pound meat thin. Top with ham and Swiss cheese. Fold the meat over and skewer to keep all in place.
Sprinkle lightly with salt and pepper. Roll in flour and then into egg beaten with milk. Remove, then roll in combined bread crumbs and Parmesan cheese.
Saute in 2 ts. butter until golden brown on both sides. Place on a serving platter and keep warm.
Remove excess fat from skillet. Add 1 stick butter and heat until foamy. Add peas and heat for another minute.
Pour over the veal. Sprinkle with parsley and serve immediately.
