Easiest veal ever. Just brown the meat in a pan before tossing it in the slow cooker with mushrooms, peppers, and tomatoes. Perfect with some wilted greens on the side.

ingredients
1 tablespoon vegetable oil 1 1/2 pound stewing veal, cut in 1-inch cubes 2 cans (15 ounce size) stewed tomatoes, undrained 4 green bell peppers, seeded and chopped 1 clove garlic, minced 1 can (4 ounce size) sliced mushrooms, drained 1 large onion, chopped 1 dash dried oregano salt and pepper, to taste
directions
Heat the oil in a skillet over medium heat. Add the veal and cook, stirring, until browned. Drain off any excess oil.
Put the veal in the crock pot and add the remaining ingredients. Stir well to mix.
Cover the crock pot and cook on high heat for 4 hours or until the veal is tender. Season to taste with salt and pepper before serving.
