Shrimp and Scallops Casserole

Make dinner exciting with this shrimp and scallops casserole. A savory mix of tender seafood, melted butter, and crunchy crackers that's ready in just 25 minutes. Simple and delicious.

ingredients
2 pounds bay scallops
2 pounds large shrimp
1 package (12-14 ounce size) buttery crackers, such as Ritz
1 1/2 cup unsalted butter, melted
garlic powder, to taste
chopped fresh parsley, to taste
directions
Preheat the oven to 350 degrees F. Grease a 9x13-inch baking dish.
Place the scallops and shrimp in the baking dish.
Crush the crackers and place in a bowl. Stir the melted butter, garlic powder, and parsley into the crackers, mixing until well combined.
Sprinkle the cracker mixture evenly over the seafood in the baking dish.
Place the baking dish in the oven and bake at 350 degrees F for 20-25 minutes or until the cracker crumbs are just starting to brown and the seafood is cooked.
Serve the seafood casserole hot.

My husband and I really enjoyed this recipe, once it was finally finished cooking. I used 1/3 of recipe ingred (approx. 1 lb scallops and 1 cup shrimp). Was not cooked @ 20 minutes, put back in oven for 10 more minutes; still not finished; ended up sticking ithe casserole in microwave for 10 additional minutes on high! My casserole dish was narrow and high, which is part of the reason for needing the extended cooking period. Next time, I plan to cook seafood for 3- 5 minutes on stove top, then will put seafood in the casserole dish and top with cracker crumbs, I think that will solve most of the lengthy cooking problem! Used 1 tsp garlic with butter ~ produced a very tasty topper! TY
