Sweet & Sour Almond Chicken

ingredients
2 tablespoons oil
1/4 cup sliced almonds
12 ounces skinless, boneless chicken breast halves, cut into bite-size strips
3/4 cup sweet and sour sauce
1/4 teaspoon ground ginger
1 can (14.5 ounce size) cut green beans, drained
1 can (14.5 ounce size) sliced carrots, drained
1 can (15 ounce size) lite chunky mixed fruits, drained
directions
Heat oil in large skillet; add almonds. Cook and stir over medium heat 2 minutes or until toasted. Remove almonds with slotted spoon.
Add chicken to skillet; cook and stir over medium-high heat 3 minutes or until chicken is not longer pink.
Add sauce, ginger, beans, carrots and fruit; heat through. Serve over chow mein noodles or rice, if desired. Sprinkle with almonds.
