Roast Goose Recipe

Ingredients:
12 pounds goose
salt
stuffing/dressing (your own recipe or a mix)
Directions:
Remove neck and giblets from goose. Discard fat. Rinse and dry goose and rub skin with salt. Then prick with a fork (this is *very* important!). Stuff goose with preferred dressing and secure with skewers and string. Put the goose on a rack in a shallow roasting pan. Roast in a 325 oven 3 1/2 to 4 hours, or until done (use a thermometer). Remove fat from pan on a regular basis.
The last step is to send me the removed goose fat, as I love to use it for roasting potatoes!
