1 tablespoon butter, melted
4 slices Swiss cheese
4 boneless skinless chicken breast
4 thin slices ham or Canadian bacon
spicy brown mustard

directions

Brush one side of chicken with butter. Place in preheated broiler on broiler pan, about 4 inches from heat. Cook about 5 minutes. Turn chicken over and do same with other side. Be sure chicken isn't pink inside. Brush tops of chicken with mustard, place 1/2 slice of cheese on top of each breast, then place ham on top of the cheese. Broil until ham is warm. Then top with the rest of the cheese and broil until cheese is melted.

Very quick and easy to cook. Works great in a toaster oven with a broil function.

    This was so easy to make. I broiled it in the toaster oven. I served it with Bacon and Cheese Cauliflower casserole. Topped the chicken with a little bit of sauce from casserole. Kids loved it!

    I thought this was awesome with some alterations: Slice the chicken open (pocket) and layer cheese, meat and mustard, hold together, dip in melted margarine and dredge in bread crumbs, then wrap tightly in foil and bake 350 for 30 minutes. It's awesome! A stronger cheese might make it even better. Swiss is great but lacks zing.

    This was a great and easy recipe. Just right for my South Beach diet. I just added a sprinkling of dill weed and garlic salt on top of the butter.

    This recipe was extremely easy. Taste was wonderful (the spicy mustard really added the extra punch that it needed). Also low carb for those watching their carb count.
