Chicken

1 can (10.75 ounce size) reduced fat cream of chicken soup
5 ounces water
1/2 cup chopped onions
1 teaspoon paprika
1 teaspoon lemon juice
1 teaspoon rosemary
1 teaspoon thyme
1 teaspoon salt
1/4 teaspoon pepper
4 skinless boneless chicken breast halves
non-stick cooking spray

Dumplings

3 tablespoons shortening
1 1/2 cup flour
2 teaspoons baking powder
3/4 teaspoon salt
3 tablespoons fresh, chopped chives
OR
2 tablespoons dried chives
3/4 cup skim milk

directions

Spray crock pot with non-stick cooking spray. Place chicken in crock pot. Mix remaining ingredients together and pour over chicken. Cover and cook on low 6-8 hours. One hour before serving, prepare chive dumplings.

For Dumplings: Mix dry ingredients and shortening. Add chives and milk, combine well.

Drop by teaspoonful onto hot chicken and gravy. Cover and cook on high for 45-60 minutes.

Serve with mashed potatoes and vegetables, or over hot, cooked noodles.

    I followed the 4 serving recipe exactly using my 6 quart crock pot and had a glob of mush so added more soup, chicken broth, milk, bouillon cubes for flavor, mixed veggies and turned it into a great chicken stew but it was a disappointment, if I would try it again and that is probably not going to happen I would cut the dumpling measurements in half and add at least 3 cans of soup to the 4 serving recipe and the chicken breasts were small so that was not the problem. I have never made a receip from this site that we were not happy with so will continue to try them.

    • So sorry to hear that this recipe didn't turn out as you expected it to. It's a fricassee, not really the kind of chicken and dumplings that I think a lot of people are used to, so I wouldn't add any additional liquid (it's meant to be very thick, not soupy). It sounds like the problem was that the dumplings didn't cook through in the time listed in the recipe. If you have a crock pot that is slow to heat up, it may have lost too much heat while the dumplings were being added and just didn't get back up to the temp it needed to in order to cook the dumplings in an hour. In this case, I'd recommend cooking them longer than called for (at least 30 minutes, depending on your crock pot).
