Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
Mandarin Orange And Cashew Chicken

ingredients
1 can (11 ounce size) Mandarin orange segments
1/4 cup stir-fry sauce
1 pound boneless, skinless chicken breast halves
3 tablespoons vegetable oil, divided
1/3 cup roasted cashews
1 clove garlic, minced
1 medium onion, chunked
1/4 pound fresh snow peas, cut in half
1/4 pound fresh mushrooms, sliced
directions
Reserving 2 Tbsp. syrup, drain Mandarin oranges. Blend reserved syrup with stir-fry sauce. Cut chicken into 1-inch pieces.
Heat 2 Tbsp. oil in a hot wok or large skillet over high heat. Add chicken, cashews and garlic. Stir-fry for 3 minutes. Remove.
Heat remaining oil in same pan. Add onion and stir-fry for 2 minutes. Add snow peas and mushrooms, then stir-fry 2 minutes longer.
Add chicken and stir-fry sauce mixture. Cook and stir to coat chicken and vegetables with sauce.
Remove from heat. Gently stir in Mandarin oranges.

Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

Very tasty recipe and easy to make. I added a small can of baby corn to help my family get their "5-a-day". I also added about 1/4 to 1/2 teaspoon of Red Pepper Flakes to give it a bit of a Szechuan kick. Served over Rice it was a big hit!
