ingredients

2 1/2 pounds pork shoulder, trimmed and cubed
1/2 tablespoon coarse kosher salt
1 tablespoon dried anise
1/2 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
2 tablespoons water
1/2 pound pork fat, cubed
4 cloves garlic, peeled

directions

Place the cubed pork shoulder in a large bowl. Season with the kosher salt, anise, black pepper, cayenne, oregano, and thyme. Toss the pork to coat it in the seasonings. Drizzle the pork with the water and then gently work the seasoning mixture into the meat.

Using a meat grinder, alternate the seasoned pork, pork fat, and garlic cloves through the feed tube to evenly disperse the ingredients.

Form the sausage mixture into patties or links, or leave as is. Refrigerate in an airtight container for up to 4-5 days or freeze for up to 6 months.
