This Italian cheese is so versatile that it can be used in both sweet and savory recipes from cheesecakes to lasagnas.

Lowcountry is an area located along the South Carolina coast and it has a distinct cuisine that is similar to Cajun cooking. This tasty seafood boil is made with Italian sausage, potatoes, corn, shrimp, and seasoned with Old Bay.
1 pound hot Italian sausage
2 pounds whole new potatoes, scrubbed
1 cup white onion, chopped
8 small ears corn, husks and silk removed
1 1/2 pound shrimp (unpeeled)
1/3 cup Old Bay seasoning
Boil six quarts water in a stockpot with Old Bay Seasoning. Add new potatoes, sausage and onions. Cook about 10 to 15 minutes. Add corn on the cob, cook about 10 minutes.
Add shrimp, cook less then 5 minutes. Drain all ingredients and put on serving platter. Serve with cocktail sauce if desired.

Beer makes batters better, meat more tender, and sauces more flavorful.
Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

One thing I like about seafood boils is that, while they can be a little on the bland side, they can are often piping hot and filling and very satisfying. All good!

I have been making this for years. It's one of our favorites. However, I would never use Italian Sausage. I use HOT smoked sausage like Hillshire Farms Jalapeno Smoked Sausage or Roger Wood Sausage from Walmart. You can also use Andoulie Sausage or any other HOT smoked sausage. I've used them all. The Roger Wood skin is a little tougher but the sausage has a great flavor. I prefer the Hillshire Farm jalapeno brand. Bottom line - Italian Sausage? NOT! jmo
