Striped Bass With Cucumber-Pepper Salad

ingredients
4 fillets (8 ounce size) striped sea bass
BASIL-BALSAMIC MARINADE
1 bunch fresh basil, stems removed
1 cup olive oil
1/2 teaspoon minced garlic
1/4 cup aged balsamic vinegar
1 teaspoon sugar
salt and pepper, to taste
SALAD
2 cups daikon radish, julienne-cut
2 cups jicama, julienne-cut
1 medium English cucumber, skinned, seeded and julienne-cut
1 medium yellow bell pepper, julienne-cut
1 medium red bell pepper, julienne-cut
3 tablespoons rice wine vinegar
1 tablespoon sesame oil
directions
Mix all marinade ingredients very well in a food processor. Put enough of the marinade aside to garnish the fish. Marinate striped sea bass in the remaining marinade overnight in refrigerator.
Remove fish from marinade and bake in a 375 degrees F oven or grill until cooked through. Garnish with fresh basil and reserved marinade.
Marinate salad ingredients in vinegar and oil for at least 30 minutes. Season with sea salt and fresh ground pepper.
