ingredients
2 pounds tilapia fillets, rinsed and patted dry
18 green olives, with pimientos, or pitted black olives, sliced
4 cloves garlic, chopped fine or crushed
1 large can stewed tomatoes, with juice
2 tablespoons parmesan cheese, grated - or to taste
1 tablespoon seafood seasoning (like Old Bay)
salt and black pepper, to taste
fresh parsley, chopped
directions
While oven is pre-heating to 375 degrees F, arrange the fish in a large, glass casserole dish and pour the tomatoes and their juice over tilapia fillets. Sprinkle evenly with the garlic, seafood seasoning, salt, and pepper. Top with the sliced olives. Grate the Parmesan cheese over the top. Bake fish uncovered, until just opaque in center (about 20-25 minutes, for fillets about 1" thick).

I used the fish seasoning recipe from this site and this was a hit at a dinner party. Loved how easy it was and how great it looked on the platter!

I guess if you like it easy, this certainly was! However it really didn't taste that great. The tomatoes made it too juicy and the olives just didn't seem to go. I'd skip this one if you have time to make a better dish.

Very tasty and easy to make. Even husband (who is not fond of tilapia) said it was pretty good.

The name doesn't lie - this recipe was incredibly easy yet full of flavor. We opted for the black olives instead of the stuffed green olives and used a can of diced tomatoes instead of stewed. Our fillets weren't an inch thick so the cooking time was a little less. From start to finish took us less than 30 minutes. If anyone tries this with the green olives we'd love to hear a review!
