under 30 minutes
ingredients
1 halibut fillet
1 Yukon Gold potato
oil
seasoned salt
directions
Season fillet with salt. Peel and shred the potato. Top halibut with the shredded potato thickly enough so you can barely see the fish.
Heat oil in a medium skillet so it is very hot. Add the halibut, potato side down. Use a second utensil to ease it down and avoid splashing the oil.
When the potato is golden brown, remove from the skillet and finish cooking the halibut in a 400 degrees F oven for 10 minutes.

Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
