Keeping a can of frozen orange juice concentrate in the freezer means you can make more than just orange juice. Try it in a variety of orange-flavored recipes.




2 tablespoons finely chopped fresh herbs (such as basil, tarragon and/or dill)
2 tablespoons fresh lemon juice
1/2 teaspoon olive oil
2 cloves garlic, minced
4 halibut steaks (4 ounce size)
1/4 teaspoon salt
1/4 teaspoon coarse ground black pepper
In small bowl, combine herbs, lemon juice, oil and garlic; mix well. Place halibut on large plate. Sprinkle fish with salt and pepper; spoon herb mixture over fish. Let stand at room temperature for 15 minutes to marinate.
Meanwhile, heat grill. When ready to grill, place fish on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 8 to 12 minutes or until fish flakes easily with fork, turning once. If desired, sprinkle fish with additional chopped fresh herbs before serving.
To broil halibut, place on broiler pan; broil 4 to 6 inches from heat using times above as a guide, turning once.
