The ingredient list may look a little intimidating, but this homemade Thai sweet chili sauce actually comes together easily.

1/2 teaspoon all-purpose flour
1 tablespoon cold water
1/2 cup rice vinegar
1/4 cup sugar
2 tablespoons plum sauce
1 tablespoon Thai fish sauce
1 tablespoon fresh lime or lemon juice
2 teaspoons tomato paste
1/2 cup water
1 teaspoon minced garlic
1/2 teaspoon minced Serrano chili
1/2 teaspoon ground red chili paste
1/2 teaspoon sweet paprika
1/2 teaspoon salt
Combine the flour and first measure of water and mix until smooth.
Combine all the ingredients in a small saucepan over medium heat and bring to a boil. Reduce the heat to low and let simmer for 4 minutes.
Let cool then use as desired. Store in the refrigerator in a tightly covered container for up to 3 days.
