under 30 minutes
ingredients
1 cup light broth
1/3 cup mirin, sweet sherry or honey
1/3 cup soy sauce
1 teaspoon MSG, (optional)
1 piece (1" size) daikon radish
horseradish
ginger, grated, to taste
lemon juice, optional
directions
Mix all ingredients except the horseradish, ginger and lemon juice. Bring to a boil, and remove from heat.
Grate the radish. Hydrate the horseradish if you are using the dried product.
For serving, put warm sauce into individual bowls. Place a heap of the radish topped with horseradish on each plate of fried food.
Each person should mix as much of this with his sauce as suits his taste. Add the lemon juice if desired. This sauce used mainly with Tempura.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
