Graham Cracker Crust
1 1/2 cup graham cracker crumbs
1/4 cup sugar
1/3 cup melted butter
Cream Cheese Layer
1 package (8 ounce size) cream cheese, softened
1/4 cup sugar
2 tablespoons milk
3 cups frozen whipped topping, thawed, divided
Pudding Layer
2 packages (4-serving size) instant pistachio pudding mix
3 1/2 cups cold milk
directions
Combine the graham cracker crumbs, sugar, and melted butter in a bowl with a fork until well mixed. Press the mixture evenly into the bottom of a 13x9 pan. Place in the freezer for 15 minutes.
Meanwhile, combine the cream cheese, sugar, and 2 tablespoons of the milk in a mixing bowl. Beat on medium speed until the mixture is smooth.
Gently fold in half of the whipped topping into the cream cheese mixture. Spread the cream cheese mixture evenly over the graham cracker crust. Place the pan in the refrigerator while you prepare the next layer.
Place the milk in a mixing bowl and add the pistachio pudding mix. Beat with the mixer on medium speed for 3-4 minutes or until the mixture thickens. Pour the pudding layer over the cream cheese layer. Place the pan back in the refrigerator for 4 hours or overnight.
Just before serving, spread the remaining whipped topping on the pistachio layer.
