Ingredients:
1 baked pastry shell (9" size)
8 ounces cream cheese, softened
1 can (14 oz. size) sweetened condensed milk
1 can (6 oz. size) frozen pink lemonade concentrate, thawed
3 drops red food coloring
4 ounces cool whip
***Pink Coconut***
1/2 cup flaked coconut
1/2 teaspoon water
2 drops red food coloring

Directions:

In large mixer bowl, beat cream cheese until fluffy; gradually beat in sweetened condensed milk, then lemonade concentrate and food coloring, if desired. Fold in whipped topping.

Pour into prepared pastry shell. Chill overnight for best results. Garnish with pink coconut.

Pink Coconut: Combine flaked coconut, water and red food coloring in small plastic bag. Shake well. Sprinkle pink coconut on top of pie.
