Banoffi Pie Recipe

Ingredients:
***Pie Shell***
4 ounces butter
9 ounces ginger biscuits, crushed
***Toffee***
1 can sweetened condensed milk
6 ounces butter
6 ounces fruit sugar
***Filling***
3 bananas
1/2 pint whipping cream
grated chocolate or instant coffee powder
Directions:
For crust: Melt the butter, mix in the ginger biscuit crumbs. Press into a loose bottomed pie plate. Use a fluted pan if possible. Chill.
For the toffee: Either boil the unopened can of sweetened condensed milk in water for four hours, checking the water level from time to time. Don't let the pan boil dry! Allow to cool slightly, mix in butter and sugar. or Melt the butter, add the sugar and milk and heat for about 5 minutes, stirring constantly, till it changes to a light golden caramel colour. Cool slightly. Pour toffee into pie shell. Chill.
Slice 2 bananas over the toffee. Spread whipped cream over the mixture. Decorate with more banana slices. Sprinkle with grated chocolate or dust lightly with instant coffee powder.
