Cake Mix Coffeecake

There's nothing quite like a warm, freshly-baked coffee cake. This recipe uses a yellow cake mix, vanilla pudding mix, and sour cream for an easy version that tastes like homemade.

1 package (18.25 ounce size) yellow cake mix
1/2 cup vegetable oil
1 package (3.4 ounce size) instant vanilla pudding mix
1 cup sour cream
4 eggs
1/2 cup sugar
1 teaspoon ground cinnamon
1/2 cup chopped pecans

directions

Preheat the oven to 325 degrees F. Grease a tube pan.

Combine the cake mix, oil, pudding mix, sour cream, and eggs in a mixing bowl. Beat on medium speed with an electric mixer until blended.

In another bowl, stir together the sugar, cinnamon, and pecans.

Transfer half of the cake mix batter to the greased tube pan. Evenly sprinkle it with half of the pecan mixture. Top with the remaining cake batter and then sprinkle with the remaining pecan mixture.

Place the pan in the oven and bake at 325 degrees F for 45 minutes or until done.

Let cool in the pan for 10 minutes then invert onto a rack to cool completely.

    No one can ever guess that this is made from a cake mix. The cake is SO moist and yummy. I also tried it with butterscotch pudding and that was delicious too.

    I baked this in a 13x9 pan because I don't have a tube pan. It took less time to bake but sorry I didn't really time it I just tested it with a toothpick to see when it was done. Maybe 35 minutes? But be sure to just bake it until done and test it. Going to try this next time with a butterscotch pudding mix.

    This cake is moist and delicious. It is excellent. I did one following this recipe, then I did another one using brown sugar instead of regular sugar, and added some choc chips with butter plus the cinnamon and nuts. It was really out of this world.
