Pina colada flavors but in ice cream form. Made with sweetened condensed milk, cream of coconut (not coconut milk), rum, whipping cream, pineapple, and toasted coconut.
1 can (14 ounce size) sweetened condensed milk
3/4 cup Coco Lopez cream of coconut
3 tablespoons light rum
3 cups heavy cream
1 can (15.25 ounce size) crushed pineapple in juice, well drained
1/2 cup toasted coconut flakes
In a mixing bowl, combine the sweetened condensed milk, cream of coconut, and rum. Mix on medium speed with an electric mixer until well beaten. Stir in the remaining ingredients by hand.
Pour into your ice cream machine and process as recommended by the machine manufacturer. Serve immediately or transfer to a freezer container and place in the freezer until ready to serve.

I only have a tiny ice cream maker so I had to scale this recipe down quite a bit so it would fit. I wish I had a bigger machine because this recipe was delicious! We scarfed it down as soon as it was made.

This is a non-cooked ice cream recipe which was nice because I didn't have to wait for it to cool down before freezing it. The ice cream maker I put this in tends to clog up with too many "add-ins" so next time I would add the pineapple and coconut once the base had started to freeze and thicken. It's a sweet recipe but it wasn't as sticky-sweet as I figured it would be giving the ingredients! I liked the toasted coconut, it added a real nutty flavor. Does it taste like a pina colada? I'd say yes. Both the pineapple and coconut flavors were pleasantly noticeable. One note, this makes a lot of ice cream. The full recipe didn't quite all fit in my larger ice cream maker.
