Chilled Beet-Cantaloupe Soup

ingredients
2 pounds beets or equivalent canned cut beets
butter or oil
1 medium Vidalia or other sweet onion, peeled and chopped
2 cloves fresh garlic, crushed, peeled, and minced
1/2 teaspoon salt
1/4 cup granulated sugar (to taste, optional)
1 cantaloupe, seeded
2 fresh lemons, juice and zest of
1 cup fresh orange juice
directions
Cook and peel beets or use canned beets. Cut into quarters and set aside.
Cook onion in 1 Tbsp. butter or oil until somewhat translucent. Add garlic for last minute. Do not brown garlic or it will be bitter.
Puree onions and beets in a food processor. Seed cantaloupe and scoop it out and puree it with the beets. Season with lemon juice and salt. Add orange juice and chill (Ice cubes will chill quickly; you can substitute them for the water).
