This soup is an easy alternative to taco Tuesdays. Beans, bacon, tomatoes, and taco seasoning make a zesty bowl that you can serve up with all your favorite taco toppings.

4 slices bacon
1 1/4 cup bean soup mix or any combination of dried beans
1 onion, chopped
3 cups water
1 package taco seasoning mix
2 cans (14 ounce size) diced tomatoes, undrained
chopped hot chile peppers, optional
Cook bacon until crisp, drain on paper towels, and crumble.
In 3-4 quart crock pot, combine bacon with bean soup mix, onion, water, taco seasoning mix, and hot peppers (optional) and mix well to blend. Cover and cook on Low for 5-6 hours.
