Slow Cooker Congressional Bean Soup

ingredients

1 pound small white beans, soaked overnight
8 cups water
2 cups diced ham
1 cup diced onion
1 cup chopped celery
2 tablespoons chopped fresh parsley
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf

directions

Add all the ingredients to the crock pot and stir well to combine.

Cover the crock pot and cook on low heat for 8 hours or until the beans are tender. Remove the bay leaf.

Serve hot.
