2 1/4 cups dried lentils, sorted and rinsed
28 ounces vegetable broth
6 ounces Canadian bacon, coarsely chopped
2 medium carrots, peeled and sliced
1 medium potato, peeled and diced
1 medium onion, chopped
1 medium stalk celery, sliced thin
4 cups water
1 teaspoon dried thyme leaves
1/2 teaspoon salt
1/4 teaspoon black pepper
Add all the ingredients to the crock pot and stir well.
Cover the crock pot and cook on low heat for 8 hours or until the lentils, potatoes, and carrots are tender.
Stir well and adjust the seasoning as needed before serving.
