Spinach And White Bean Soup

ingredients
4 slices bacon, diced
2 onions, diced
butter, as needed
2 cloves garlic, mashed
1 package frozen spinach, thawed
1 can (15 ounce size) white beans, drained
5 cups chicken broth
1 bay leaf
salt and pepper
grated Parmesan cheese
directions
Saute bacon slowly over low heat. Do not crisp or brown. Add onions. Sweat, adding 1 tablespoons butter if there are not enough bacon drippings to cover onions. Add garlic. Cook for 2 minutes do not brown.
Add spinach and bean. Add broth. Add bay leaf. Cook for 25 to 30 minutes.
Season with salt and pepper to taste. Sprinkle cheese to taste on top.
Serve with garlic croutons.
