If you read the directions you'll see that 2 cups of the bean mixture goes into each jar. And the directions to make the soup use 2 cups (one jar) of the bean mix. This is a recipe for making a large quantity of the MIX (for gift giving or other uses).

Try using Polish Sausage or Smoked Sausage instead of ham. For a spicier version, use 1 can of stewed tomatoes and 1 can of Rotel, and garlic pepper.

I definitely think the 2T salt was a misprint, I got plenty of salt with the ham hock and just needed to add a couple of pinches to make it just right.
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
