Marshmallow Parfaits

ingredients
1 package (3 ounce size) gelatin, any fruit flavor
1 cup boiling water
1 cup cold water
1 cup miniature or diced marshmallows
directions
Dissolve gelatin in boiling water. Add cold water and chill until very thick.
Whip 2/3 cup of the gelatin until fluffy. Spoon about half of the clear gelatin into parfait or slender 5 oz. glasses. Top each serving with marshmallows, whipped gelatin, and remaining clear gelatin, in that order.
Chill until firm. Serve topped with whipped cream if desired.
