Batter-Dipped Cheese Balls

ingredients
Batter
3/4 cup milk
2 tablespoons brandy
2 tablespoons olive oil
1 egg yolk
1 1/2 cup flour
1 tablespoon baking powder
honey or confectioners' sugar
Filling
1 container (16 ounce size) sweet myzithra or ricotta cheese
2 tablespoons sugar (or more, to taste)
1 teaspoon cinnamon
2 cups olive oil for frying

Whisk the batter ingredients, liquids and egg yolk first, adding the flour and baking powder slowly until you have a batter that resembles a thick custard.
With an electric mixer, mash myzithra or ricotta cheese with the sugar and cinnamon until smooth. Both cheese and batter can be made ahead of time.
Have fryer ready at 350 degrees F with (boiling) oil for frying.
Make little balls out of the cheese mixture. Dip each ball in the batter and brown a few at a time quickly in the hot oil.
Lift out with a slotted spoon, drain on rack or paper towels, and serve with honey or confectioners' sugar.
TIP: Because they cook so quickly, have someone help by removing them as you prepare them.
