Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

This receipe is so easy and delicious. I get these together in the afternoon and take them out of the refrigerator in the morning to come to room temp before putting in the oven. Can't ask for an easier way to start the weekend. I use Rhoades frozen dinner rolls and lots of raisins. It is also great for large groups and can be frozen up to 2 weeks before you bake them - just remove from the freezer to refrigerator 1 whole day before baking.
